Monster Muesli products are all great for breakfast or can all be made into a whole range of muesli bars or biscuits. Here's some recipes for using Monster Muesli products in other great tasting ways! MONSTER MUESLI SLICE by Marg Hutton

 Preparation time 5 minutes  Cooking time 30mins  Makes Approx 16 rectangles

     Ingredients

  • 4 cups Monster Muesli
  • 1 x 395g can sweetened condensed milk
  • 1 cup chocolate melts. (dark or milk chocolate)
  • 1 cup walnuts or pistachios coarsely chopped

 Method Preheat oven to 170deg (fan forced). Line a lamington pan with baking paper allowing it to overhang at either end. Combine the muesli, nuts and condensed milk in a large bowl. Spoon the mixture into the prepared lamington pan and smooth the surface. Bake in prepared oven for 30 minutes or until golden brown and set. Allow to cool and then drizzle with melted chocolate. Cut into rectangles to serve.

MONSTER MUESLI BIRCHER STYLE - Add the juice of half an orange to half a cup of Monster Muesli SPORTS.  Add your favourite yoghurt (mine is Harris Farm Markets Yoghurt), then add your favourite fruits (mine are nectarines, bananas, passionfruit and green grapes).  If you do not eat it all for breakfast and it is hard to stop!! then refrigerate till lunchtime.  YUM!!  It will keep overnight.

SARAH'S COCONUT SLICE

Melt 90g butter, mix in 1/2 cup raw sugar, 1 egg. 1/2 cups SR Flour, 1/2 cup plain flour.  Press down into slice tray.  Mix 2 eggs, 1/3 cup raw sugar, 1 cup dessicated coconut and 1 cup Monster Muesli LITE (or Monster Muesli SPORTS).  Spread over top of mixture and bake 180 degrees  35 mins.

WHOLEMEAL WALNUT CARROT CAKE

1 cup wholemeal plain flour, 1 cup raw sugar, 1tspn bicarb soda, 1tspn cinnamon, 2 eggs, 2/3 cups sultanas, 2/3 cups walnuts, 2/3 cups Monster Muesli SPORTS muesli, 1.5 cups grated raw carrot, 1/2 cup sunflower oil 

Mix all ingredients and bake in big square tin in a slow oven for 40-50mins.  Best carrot cake ever!!

KATHY'S ANZAC BISCUITS  1 cup MULTI GRAIN PORRIDGE or SPORTS MUESLI , 3/4 cup desiccated coconut, 1 cup plain flour, 1 1/2 tspns bicarb soda, 2 tblspn boiling water, 1 cup sugar, 125g butter, 1 tblspn golden syrup.  Combine Multi Grain Porridge OR Sports Muesli with flour, sugar and coconut.  Melt butter and golden syrup.  Mix soda with boiling water, add to melted butter mixture, stir into dry ingredients. Place spoonfuls of mixture on greased oven tray.  Bake in slow oven 20mins,  Enjoy.

DEB'S MUESLI BAR

Deborah Middleton of Glenhaven in NSW has given us her great recipe for a muesli bar using Monster Muesli Lite partly because she is "tired of writing it out for her friends". Thanks Deb.

INGREDIENTS
4 Cups of Monster Muesli LITE muesli
1 cup of Dessicated Coconut
1 Cup of Dried Apple or Apricot chopped
1/2 Cup of Self Raising Flour
1 can of Skim sweetened condensed milk
2 eggs

DIRECTIONS
Mix all ingredients, except skim milk and eggs, in a bowl.  In a separate bowl mix skim milk and eggs.  Pour mixture into dry ingredients and mix.  Spoon into greased and lined baking pan.  Press down firmly.  Bake 25 minutes in 160oC degree oven.

TIP - Cut while hot and leave in tin to cool!

MICHELE NICHOLS of QLD  - gluten free Banana Cake 
Banana Cake 
2 Bananas
2tspn honey (or golden syrup)
2tspn Olive oil
1tspn Vanilla extract
1 1/4 cups gluten free SR Flour
1 1/2 cups Monster Muesli Free & Lo  plus extra 1/4 cup Monster Muesli Free & Lo

Mash bananas and mix in honey, vanilla and oil.  Stir through dry ingredients, pour into non stick loaf tin.  Sprinkle with extra Monster Muesli and bake at 175 degrees C approx 25 mins (until a skewer comes out clean).

KATHY'S BANANA OAT MUFFINS  125g butter, 3/4 cups brown sugar, 2 eggs, 1/4 cup milk, 2 ripe bananas mashed, 1 1/2 cups pl flour, 1 tspn baking powder, 2/3 cups MULTI GRAIN PORRIDGE or SPORTS MUESLI, 1/2 tspn lemon or orange rind.    METHOD: Beat butter and sugar together in electric mixer; beat in egggs, milk and banana;  add flour, Multi Grain Porridge or Sports Muesli and rind.  Spoon into muffin trays and bake at 190 degrees for 15-20 mins.

MICHELE NICOLS of QLD - gluten free Chocolatie Treat 

Chocolatie Treat
200g copha,
3tblspn cocoa,
1 cup dessicated coconut,
1 1/2 cups icing sugar,
1 1/2 cups Monster Muesli Free & Lo,
3 cups gluten free rice puffs/cereal.

Method  Mix dry ingredients.  Melt copha and cocoa.  Pour over dry ingredients.  Place in a slice pan.  Refrigerate.  Cut into squares.  Yummy.

Multi Grain Porridge by Desiree

 Try this for a serving suggestion:  Soak the Multi Grain Porridge overnight in a bowl of hot water.  Cook the next morning as usual and serve with yoghurt and freshly cooked rhubarb.  Sounds great and healty too!!
